Can you picture a plant-based dinner party?

As Rowan and I happily scoffed our way through a weekend at the Cliffs of Moher Retreat in Ireland, we kept saying to each other: "If we knew how to make food that's this healthy and nutritious, we'd make it every day." The retreat's co-founder, Michelle Moroney, is ardent about a plant-based diet, and she and her team have dreamed up recipes that are rainbow-colourful and genuinely delicious. Here are some of our favourite dishes from the retreat that we'll be whipping up for our lucky friends back home.
